 1 eggplant; 50g Minced pork; Half box medium firm tofu; a small piece of ginger; 1 egg

 300ml vegetable oil; 15ml soy sauce; 5ml cooking wine; 3g salt; 5ml sesame oil

 Flour paste: 100g flour; 1g soda; 50ml iced beer

 Mix minced pork, minced ginger, soy sauce, salt and sesame oil together in a bowl and pickle it for 10 mins.

 Mash the tofu with hand and mix it with the pork.

 After washing the eggplant, chop the eggplant without cutting thoroughly (shape it like a clip). See the very middle picture.

 Fill the Eggplant “clip” with the pork stuffing. Mix the soda powder with flour, beer and egg and make the flour paste.

 Add oil in the deep fried pan and heat it. Cover the eggplant "clip" with the flour paste and fry it for 1 and half mins. When both sides of the eggplant "clip" becomes golden, you can serve it on plate.
