老北京疙瘩汤 (lǎo běi jīng gē da tāng) Old Beijing soup
原料:
熟透了的西红柿、 面粉、 香菜、 葱、 金针菇
Ingredients: tomatoes; all purpose flour; coriander; green onion; flammulina velutipes

做法:
Directions:
Cōng qiē chéng cōng
huā, jīn zhēn gū qiē xiǎo duàn, xiāng cài qiē mò
1、葱切成葱花, 金针菇切小段, 香菜切末
1. Chop all the vegetables into small pieces
xī hóng shì qiē shí zì dāo yòng
rè shuǐ tang qù biǎo pí
2、西红柿切十字刀用热水烫去表皮
2. Peel the tomato skin by curving a cross on the skin and scald in hot water
xī hóng shì qiē chéng kuài
3、西红柿切成块
3. Chop the tomatoes
miànfěnjiāshuǐ yòngkuàizǐshāowēijiǎoyíxià
4、面粉加水用筷子稍微搅一下
4. Add some water in the flour and gently stir it.

5. Stir it until you make dough strips look like this.

6、锅内做油, 煸香葱花
6. Add some oil in the pan,after the oil is boiled, add in the green onions.

7、放入西红柿煸出红油
7. Add in tomato pieces and stir it until the oil becomes red.

8、鸡蛋打散待用
8. Beat an egg

9、煸好的西红柿加入三大碗水, 爱喝汤可以多加,

加入金针菇段
9. Add in 3 bowls of water (you could add some more if you like
drinking soup), add in the flammulina velutipes
guō lǐ tāng fèi téng hòu, huǒ guān xiǎo yì diǎn, bǎo chí fèi téng jiù kěyǐ
10、锅里汤沸腾后, 火关小一点, 保持沸腾就可以,

把搅拌好的面絮倒进去
10. When the soup is boiled, turn down the heat and keep it boiling. Add in the dough strips and keep stirring the soup.

11、放入盐、 加入一点生抽, 不放也可以。
11. Add in salt(around 1 teaspoon) and some soy sauce (around 1 teaspoon). You don't have to add soy sauce.

12、将打散的鸡蛋均匀的倒入锅内慢慢搅拌,

出锅前淋香油, 加一点胡椒粉, 最后撒上香菜
12. Add in the beaten egg and stir the soup gently. Before you serve the soup, add in some sesame oil, black pepper and chopped coriander.

做面疙瘩时, 水要一点点地倒入碗内,

边倒水边不停地搅拌, 而且一定要用凉水,

这样面疙瘩才会做得又小又细,入锅即熟。

疙瘩汤千万不要煮得时间太长, 否则不但颜色不好看,
chī qǐ lái kǒu gǎn yě hěn chà
吃起来口感也很差。
When you are making the dough strip, you need to evenly pour the cold water and consistently stir it so that the dough strips would be small and thin and easy to cook. Don't boil the soup for too long or else it won't taste good.
